You can make home brew with fresh hops. The beer has an enhanced flavor, because the hops used in brewing is fresh. In the United Kingdom one or two breweries such as Wad worth use fresh hops when they are in season and you can copy them.
Manufacture of fresh hops
The hop plant is a climbing herbaceous plant with a multi-annual "stool", from hop vines growing every year. In the late growing season (September in the northern hemisphere) the vines die back, which flourished until the following spring. You will gather the flowers when fully open, and either use them immediately, or deep freeze them. A good facility will provide around 500 grams of hops. No doubt commercial planting make it better. Harvest them before they start to go brown at the edges, but not before they are fully open. You will have about a week's grace.
How you can get your hop plant
The ideal way is to dig one up and bring it home. We did it in Kent (in UK ), which is one of only two places where hops are still grown. We were not allowed (as we should have done) but often there are "fleeing" from planting grows nearby hedgerows. But there are one or two places on the internet that advertise with hops for sale, and they are worth approaching ..
How to maintain and use them in your home brew.
The easiest thing in the world. You just freeze them in polyethylene bags, so crowded that you can make them. Its the best package weighed-out quantities enough for a lot home brew. You will discover that they are in better condition than the corresponding dried hops (as in the drying process has already lost part of their strength). You do not need to thaw them before using in your home brewed beer - just throw them in the boiling wort.
Quantities and use in recipes
You can save a bit on the amount you use, but remember that they will have a small water content. We never found out what sort we had dug up, but the flavor was so good it did not seem to matter, so use them where Goldings, Fuggles, Challenger and Northern Brewer are needed. Give fresh hops a try!
