Fruit Delights

Recipe for making hot deserts like fruit mixtures Rabid, Sandesh Strawberry, Apple and Orange Malpaus Basundi 

India is a country known for its traditional foods. There are a variety of festivals. Sweets are important in the celebration of each festival. Here are some hot deserts with fresh fruit.


Mixed Fruit Rabdi 

Ingredients

Milk: 2 liters 

Sugar: 6-8 tbsp 

Mixed fresh fruit cut into squares (apple, pomegranate, banana and pineapple canning): 2 cups 

Cardamom powder: 1 tsp 

Method 

Put milk to boil in a shallow pan. Add sugar and cook on low flame stirring constantly. Remove the butter and put it on the sides of the pan. The milk must also be reduced to half its volume. Let the milk cool. Then add the mixed fruit and butter from the sides of the pan. Sprinkle cardamom powder and mix well. Serve chilled. 
Strawberry Sandesh 

Ingredients 

Milk: 2 liters 

Lemons: 2 

Icing: 5-6 tbsp 

Pink color: 2 drops 

Fresh strawberries, sliced finely: 2 cups 

Sugar (mixed with strawberries) 1 cup 

Silver Foil (optional) 

Method 

Put milk to boil. Remove the juice of the lemon. When the milk starts boiling add lemon juice. The milk will coagulate. Strain and let cool. Mix sugar and sliced strawberries. Keep it away for 3-4 hours. Drain excess water. Mix the powdered sugar and fresh paneer. Knead until light and fluffy. Add a few drops of pink color. Mix well. 

Spread half the mixture on a flat dish of approximately 125 mm thickness. Arrange strawberries on top. Cover with the remaining paneer mixture over it to spread it evenly. Chill it. Cover with silver foil (optional). Cut into squares and serve. 
Apple Malpuas 

Ingredients 

Wheat flour (Maida) ½ cup 

Milk:! / 2 to ¾ cup 

Sugar: 1 cup 

A pinch of grated nutmeg 

A pinch of cinnamon powder 

Apples (peeled and sliced into thin rounds): two 

Ghee for frying 

For serving 

A small refrigerated rabid or ice 

Method

Make dough by mixing milk with flour. The dough should be neither thin or thick. It should also be a smooth liquid consistency. Mix sugar with one cup water and put on a medium flame. The syrup should be of one thread consistency. Dip apple round of dough and fry in hot ghee until they are brown and crispy. Dip in the syrup one by one. Sprinkle nutmeg and cinnamon powder over it. Serve topped with ice cream.


Orange Basundi 

Ingredients

Milk: 1 liter 

Sugar: 1 / 2 cup 

Orange: 1 

A little sugar for the Orange Cardamom powder: 1 tsp 

Finely chopped pistachoes: 2 tsp 

Method

Peel orange and remove the segments. Sprinkle sugar and keep it away for a while. Drain excess water. Put milk to boil in a heavy bottom pan. Add sugar and let cook on low flame until it reduces to one third volume. Add cardamom powder and chopped pistachios. Chill the mixture. Then add the orange segments for refrigerated basundi. Mix well and serve.
