Thai Style Green Curry Pork with Eggplant

Learn how-to make an oriental theme, stir fried main course offers thin slices of pork and aubergines in spicy green curry sauce.

    * 1 / 4 cup coconut cream 
    2 * tablespoons green curry paste 
    * 3 tablespoons fish sauce 
    * 2 tbsp palm sugar 
    * 1 pound lean pork - thinly sliced 
    * 1 can (13.5 ounces) coconut milk 
    * 1 large eggplant - cut into cubes 
    * 1 cup pea eggplant 
    * 1 / 4 cup fresh green pepper 
    * 1 / 3 cup fresh coriander leaves - roughly chopped 

Guidelines for Green Curry Pork with Eggplant

   1st Place a wok over medium heat. 
   2nd Add coconut cream and simmer for about 5 minutes or until oil separates from the cream. Pipes cream to prevent it from burning. 
   3rd Touch the green curry paste in coconut cream and cook a minute or two, or until smooth. 
   4th Stir the fish sauce and palm sugar and cook for 1-2 minutes. 
   5th Turn heat to medium high, add pork and stir fry for 5 to 8 minutes or until pork is no longer pink. 
   6th Pipes coconut milk, turn the heat down to medium and simmer for 5 minutes 
   7th Stir the diced eggplant, peas, aubergines and green peppercorns and cook for another 5 minutes. 
   8th Turn heat off, stir in cilantro, and then transfer the pork curry to a large serving bowl. 

Green Curry Paste 

The green curry paste used in this recipe containing shrimp paste, which makes it unsuitable for vegetarians. Try making a homemade version of green curry paste, and delete the shrimp paste to make a curry paste that can used by vegans, and vegetarians. Use tofu cubes instead of pork to make a vegetarian green curry.

Recipe Tips and suggestions

   1st Thinly sliced pieces of boned skinless chicken breast can be used instead of pork. 
   2nd Thin slices of beef cuts can also substitute for pork, if required. 
   3rd If a wok is not available, use a large skillet to make Thai-style noodles. 
   4th Other fresh herbs such as basil or parsley, can be used instead of coriander. 
   5th Light brown sugar can be used instead of palm sugar. 
   6th Light soy sauce may be substituted for fish sauce.
