Lamington cake is a butter or sponge cake in the shape of cubes, coated with coconut and frosting. The following is a quick recipe to make these beautiful cakes in your own home.
Ingredients
125 grams room temperature, unsalted butter
125 grams caster sugar
Two slightly beaten eggs
250g self-raising flour
A pinch of salt
Four tablespoons milk
One teaspoon vanilla extract
For glaze:
400g icing sugar
100 g cocoa powder
175 ml boiling water
200 grams coconut
First you must beat sugar and butter together in a bowl until mixture is creamy and pale. Next, beat the eggs into the mixture, a small amount at a time until well mixed in. Add the flour and salt and fold into creamed mixture with vanilla and milk. On another note, you can just beat all cake ingredients together using a food processor until mixture is very nice and smooth.
Transfer mixture to a well-oiled and base lined cake tin. Smooth surface of the mixture level with a palette knife and bake in a preheated oven at 375 degrees Fahrenheit for about half an hour until it has risen and is firm to touch. So leave the whole mixture to cool for about 5 minutes and loosen the edges, then turn it out onto a wire rack and rake off lining paper. This should then be left out overnight.
To make glaze, put the cocoa powder and icing sugar in a mixing bowl, to a well in center and add boiling water to create a smooth chocolate icing that will pour consistent.
Cut the cake into 24 sections. Use two forks to dip each slice in the frosting and then immediately coat with coconut slice. So leave it to put on some baking paper.
This delicious cake will serve up to 24 people, preparation time is 20 minutes plus overnight standing, and cooking time is about 30 minutes.
